Red Onion Confit

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 50 g butter
  • 75 g caster sugar
  • 4 red onions, thinly sliced
  • 2 garlic cloves, crushed
  • 1 tablespoon balsamic vinegar
  • salt
  • fresh ground black pepper

Recipe

  • 1 melt the butter in a medium heavy-based saucepan.
  • 2 add sugar.
  • 3 stir over low heat until dissolved.
  • 4 add onions and cook.
  • 5 cover and continue to cook on low heat for 30 minutes.
  • 6 add garlic and balsamic vinegar.
  • 7 season and cook uncovered on low heat for another 30 minutes.
  • 8 stir every few minutes.
  • 9 once cooked, transfer to a bowl.
  • 10 cool slightly before serving.
