Red Onion Confit

Ingredients
- Servings: 4
- 50 g butter
- 75 g caster sugar
- 4 red onions, thinly sliced
- 2 garlic cloves, crushed
- 1 tablespoon balsamic vinegar
- salt
- fresh ground black pepper
Recipe
- 1 melt the butter in a medium heavy-based saucepan.
- 2 add sugar.
- 3 stir over low heat until dissolved.
- 4 add onions and cook.
- 5 cover and continue to cook on low heat for 30 minutes.
- 6 add garlic and balsamic vinegar.
- 7 season and cook uncovered on low heat for another 30 minutes.
- 8 stir every few minutes.
- 9 once cooked, transfer to a bowl.
- 10 cool slightly before serving.
