Rapini All Pizzaiola

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 2 tablespoons extra virgin olive oil
  • 2 medium garlic cloves
  • 1 cup fresh tomato, diced
  • 500 g rapini, blanched
  • 1 tablespoon oregano
  • 1 ounce wine (optional)
  • 1 lemon juice
  • salt and pepper

Recipe

  • 1 in a pan heat oil and garlic in a medium skillet over medium heat until garlic begins to sizzle, add diced tomatoes, oregano, salt, wine and sauté for 1 minute.
  • 2 add blanched rapini, and bring to a simmer. add lemon juice and cook for a few more minutes until rapini are tender stirring occasionally, and serve.
