Green Cactus Chimichurri

Ingredients
- Servings: 10
- 1 (27 ounce) can tender green cactus pieces, in brine
- 1/2 cup olive oil
- 1 garlic clove
- 1/2 lemon, juice of
- 1/2 lime, juice of
- 1 pinch red pepper flakes
- salt & pepper
- fresh cilantro (optional)
Recipe
- 1 drain cactus, add to food processor.
- 2 add juice of lemon and lime, garlic and red pepper.
- 3 add fresh cilantro to taste if desired.
- 4 turn on food processor and then stream in about 1/2 cup olive oil, or until makes a nice consistency.
- 5 salt and pepper to taste.
- 6 enjoy!
