Green Cactus Chimichurri

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 10
  • 1 (27 ounce) can tender green cactus pieces, in brine
  • 1/2 cup olive oil
  • 1 garlic clove
  • 1/2 lemon, juice of
  • 1/2 lime, juice of
  • 1 pinch red pepper flakes
  • salt & pepper
  • fresh cilantro (optional)

Recipe

  • 1 drain cactus, add to food processor.
  • 2 add juice of lemon and lime, garlic and red pepper.
  • 3 add fresh cilantro to taste if desired.
  • 4 turn on food processor and then stream in about 1/2 cup olive oil, or until makes a nice consistency.
  • 5 salt and pepper to taste.
  • 6 enjoy!
