Stuffed Lamb Tenderloin Wraped In Bacon

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 1 -2 lb lamb tenderloin
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 2 tablespoons fresh garlic cloves (chopped finely)
  • 1 whole medium onion, chopped
  • pepper
  • salt
  • season salt
  • garlic salt
  • 2 tablespoons olive oil
  • bacon, depending on the size of tendorlion
  • 1 rosemary sprig (chopped finely)
  • 2 fresh thyme leaves (chopped finely)

Recipe

  • 1 pre heat over on 350.
  • 2 cut tendorloin down the middle (not all the way just enough to beable to stuff).
  • 3 in a bowl combine red peppers, green peppers,onions, garlic,salt, pepper, rosemary, tyme, and olive oil mix well together.
  • 4 fill the tendorloin with the the thing you mixed in a bowl.
  • 5 on a cutting board place bacon close together.
  • 6 place tendorlion on top of bacon and roll the bacon over the tendolion until closed.
  • 7 heat pan with the olive oil until hot place the bacon wraped tenderloin and brown both sides.
  • 8 remove tenderloins and place in a dutch pan any left over oil place in the dutch pan and bake for 45 min -55 min until lamb and bacon is done( depending on how you like your lamb).
  • 9 let rest for 10 mins and cut and serve.
