Spunky Scalloped Corn

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 egg
  • 1 cup milk
  • 30 -35 saltine crackers (crushed)
  • 1 cup creamed corn
  • 1/4 cup green onion (chopped)
  • 1/4 cup green pepper (chopped)
  • 1/2 tablespoon black pepper
  • 1 1/2 teaspoons garlic powder
  • 1 tablespoon butter (softened)

Recipe

  • 1 beat egg then add milk and black pepper, beat well.
  • 2 mix in 20-23 crushed crackers (1 sleeve is approximately 20 crackers).
  • 3 stir in corn, green onion and green pepper.
  • 4 pour into 1 quart casserole dish.
  • 5 combine 8-12 crushed crackers with softened butter until crumbly (similar to graham cracker crust).
  • 6 sprinkle mixture over corn mixture, sprinkle garlic powder on top.
  • 7 bake for 45 minutes to one hour or until knife can come out clean from center.
