Rosemary Roast Lamb

Ingredients

- 5 lbs leg of lamb
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 8 garlic cloves, cut in slivers
- 2 tablespoons dried rosemary
Recipe
- 1 preheat oven to 425. trim lamb. cut little slits all over surface of lamb and stuff with slivers of garlic and rosemary.
- 2 rub lamb with olive oil, season with salt and pepper.
- 3 roast at 425 for 15 minutes. reduce heat to 375 and roast 90 minute longer, or until medium-rare.
