Roasted Zucchini With Garlic

Ingredients
- Servings: 6
- 5 medium zucchini
- 1 whole bulb of garlic
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon kosher salt
- fresh ground black pepper (to taste)
Recipe
- 1 wash and trim ends of zucchini.
- 2 slice zucchini lengthwise and then into 1-inch pieces.
- 3 slightly crush and peel all the cloves of garlic.
- 4 mix zucchini, garlic and remaining ingredients in a large bowl.
- 5 lay evenly onto a foil lined pan.
- 6 bake uncovered at 425°f for about 60 minutes or until tender and browned, turning once after first 30 minutes.
