Roasted Zucchini With Garlic

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 5 medium zucchini
  • 1 whole bulb of garlic
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon kosher salt
  • fresh ground black pepper (to taste)

Recipe

  • 1 wash and trim ends of zucchini.
  • 2 slice zucchini lengthwise and then into 1-inch pieces.
  • 3 slightly crush and peel all the cloves of garlic.
  • 4 mix zucchini, garlic and remaining ingredients in a large bowl.
  • 5 lay evenly onto a foil lined pan.
  • 6 bake uncovered at 425°f for about 60 minutes or until tender and browned, turning once after first 30 minutes.
