Red Onion Preserves

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 2 lbs red onions, thinly sliced
  • 8 fresh thyme sprigs, fresh
  • 4 teaspoons garlic, chopped
  • 2 tablespoons olive oil
  • 1/2 cup port wine
  • 1/2 cup dry red wine
  • 1/2 cup grenadine
  • 1/4 cup balsamic vinegar
  • 1/4 cup sugar
  • 1 1/4 cups water

Recipe

  • 1 heat oil in a heavy pot over medium high heat.
  • 2 add onioins, thyme and garlic. saute until onions are slightly softened, about 10 minutes.
  • 3 add water everything else and bring to a boil gently until the onions are soft, liquid is reduced and mixture thickens to jam consistency. stir often during this time, about 30-40 minutes. add more water by 1/4 cupfuls to prevent sticking, as needed.
  • 4 put into sterilized jars for long storage or can be kept in the fridge if it will be used soon.
  • 5 before serving, reheat until just heated through.
