Lemon-mint Vinaigrette

Ingredients

  • 1/3 cup fresh lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon sugar
  • 1 garlic clove, minced
  • 1/3 cup extra virgin olive oil
  • 1/3 cup chopped fresh mint
  • 1/8 teaspoon salt, to taste
  • fresh ground pepper

Recipe

  • 1 whisk lemon juice, mustard, sugar and garlic in a small bowl until blended.
  • 2 drizzle in oil, whisking until blended.
  • 3 stir in mint, salt and pepper.
  • 4 note: can be kept in refridgerator for up to 2 days.
