Rosemary Roast Lamb

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 5 lbs leg of lamb
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 garlic cloves, cut in slivers
  • 2 tablespoons dried rosemary

Recipe

  • 1 preheat oven to 425. trim lamb. cut little slits all over surface of lamb and stuff with slivers of garlic and rosemary.
  • 2 rub lamb with olive oil, season with salt and pepper.
  • 3 roast at 425 for 15 minutes. reduce heat to 375 and roast 90 minute longer, or until medium-rare.
