Kenulia's Carrot Casserole
Ingredients

- 2 pounds carrots, shredded
- 1 (8 ounce) package reduced fat cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- 1 cup french fried onions
- 1/2 teaspoon garlic salt
- 1 tablespoon dried parsley

Cook Time: 25 mins
Ready Time: 40 mins
- preheat oven to 350 degrees f (175 degrees c).
- in a bowl, mix the carrots, cream cheese, cheddar cheese, butter, 1/2 cup french fried onions, and garlic salt. scoop into a 2 quart casserole dish. top with remaining french fried onions and dried parsley.
- bake 25 minutes in the preheated oven, until bubbly and lightly browned.
