Kenulia's Carrot Casserole

Ingredients

  • Servings: 8
  • 2 pounds carrots, shredded
  • 1 (8 ounce) package reduced fat cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 cup french fried onions
  • 1/2 teaspoon garlic salt
  • 1 tablespoon dried parsley

    Preparation Time: 15 mins Cook Time: 25 mins Ready Time: 40 mins

  • preheat oven to 350 degrees f (175 degrees c).
  • in a bowl, mix the carrots, cream cheese, cheddar cheese, butter, 1/2 cup french fried onions, and garlic salt. scoop into a 2 quart casserole dish. top with remaining french fried onions and dried parsley.
  • bake 25 minutes in the preheated oven, until bubbly and lightly browned.
