Mexi Hominy

Ingredients

  • Servings: 4
  • 2 (15.5 ounce) cans or yellow hominy, rinsed and drained
  • 1 (16 ounce) can diced tomatoes
  • 1 (4.5 ounce) can diced green chiles
  • 1 teaspoon ground cumin
  • 1 clove minced garlic
  • chopped fresh cilantro
  • salt and pepper to taste
  • shredded monterey jack cheese (optional)

    Preparation Time: 15 mins Cook Time: 10 mins Ready Time: 25 mins

  • in a saucepan over medium heat, stir together hominy, tomatoes, green chiles, cumin, and garlic. cook about 7 minutes. stir in cilantro. remove from heat, divide into bowls, and top with cheese.
