Mexi Hominy
Ingredients
- Servings: 4
- 2 (15.5 ounce) cans or yellow hominy, rinsed and drained
- 1 (16 ounce) can diced tomatoes
- 1 (4.5 ounce) can diced green chiles
- 1 teaspoon ground cumin
- 1 clove minced garlic
- chopped fresh cilantro
- salt and pepper to taste
- shredded monterey jack cheese (optional)

- in a saucepan over medium heat, stir together hominy, tomatoes, green chiles, cumin, and garlic. cook about 7 minutes. stir in cilantro. remove from heat, divide into bowls, and top with cheese.
