Mark's Chilli Sauce

Total Time: 2 hrs 45 mins Preparation Time: 45 mins Cook Time: 2 hrs

Ingredients

  • 10 lbs chili peppers, chopped finely (fresh better than dried)
  • 6 teaspoons garlic
  • 1 1/2 cups onions, chopped finely
  • 2 cups vinegar
  • 1 1/2 cups sugar
  • 3 1/2 tablespoons paprika

Recipe

  • 1 combine all ingredients in a large stockpot and bring to a boil.
  • 2 skim off scum and slow boil for 1 to 1 1/2 hours until "crab foam" bubbles are present.
