Super Healthy Pizza

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • Servings: 2
  • 1 lb pizza dough
  • 200 g chopped tomatoes, juice drained
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, thinly sliced
  • 25 g mozzarella cheese, torn into pieces (use more if you love cheese!)
  • 1 teaspoon capers, drained
  • 8 green olives, roughly chopped
  • 1 garlic clove, finely chopped
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 spread the dough to cover the bottom of an oiled 12" pizza pan.
  • 2 spread the canned tomatoes over the dough to within 1" of the edge.
  • 3 arrange the cherry tomatoes and zucchini over the top, then scatter with the mozzarella.
  • 4 mix the capers, olives and garlic, then scatter over the top.
  • 5 drizzle evenly with olive oil and leave to rise for 20 minutes.
  • 6 heat the oven 475 degrees f and bake for 10 to 12 minutes, or until crisp and golden around the edges.
  • 7 sprinkle with the parsley to serve.
