Sauteed Baby Spinach With A Kick

Ingredients

- 1 tablespoon butter
- 1 tablespoon olive oil
- 8 ounces sliced mushrooms
- 1/2 cup chopped onion
- 2 garlic cloves, minced
- 12 ounces baby spinach leaves, washed and dried
- 1/2 teaspoon crushed red pepper flakes
- salt and pepper, to taste
Recipe
- 1 in a large skillet over medium heat, melt butter and heat oil.
- 2 add the sliced mushrooms, onion and garlic. cover skillet and cook until soft and mushrooms start to release their juices.
- 3 remove lid and add the baby spinach and red pepper flakes; stir.
- 4 replace the lid and allow to cook for about 3 minutes.
- 5 remove lid and stir; continue to sautee, uncovered, for another 2-3 minutes or until wilted to your liking.
- 6 remove from heat and season with salt and pepper to taste.
