No Cheese No Nuts Tomato Pesto

Ingredients

  • Servings: 4
  • 2 garlic cloves
  • 6 tablespoons olive oil, preferably extra virgin
  • 1/3 cup sun-dried tomato packed in oil
  • 1/3 cup packed fresh basil leaf
  • 1 teaspoon balsamic vinegar

Recipe

  • 1 in a food processor blend ingredients with salt and pepper to taste.
  • 2 process until smooth.
  • 3 transfer to ice cube trays. freeze for up to 3 months.
