Ingredients

- 25 ounces frozen cheese ravioli
- 2 large tomatoes, chopped
- 1 small onion, chopped
- 1 garlic clove, minced
- 8 ounces sliced mushrooms
- 8 ounces tomato sauce
- 1 tablespoon chopped fresh basil or 1 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup low-fat ricotta cheese (or use fat free)
- 2 tablespoons reduced fat grated parmesan cheese
Recipe
- 1 preheat oven to 325 degrees. cook and drain ravioli as directed on package.
- 2 cook remaining ingredients except cheeses in large skillet over medium-high heat, about 5 minutes, stirring frequently, until tomatoes are soft.
- 3 place ravioli in ungreased 8"x8" baking dish. spread ricotta cheese over ravioli. pour tomato sauce over top. sprinkle with parmesan cheese. bake, uncovered, for about 20 minutes or until hot.
