Sauted Asparagus With Mushrooms

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 bunch asparagus
  • 1 large shallot
  • 2 garlic cloves
  • 1/4 cup butter
  • 8 ounces shiitake mushrooms or 8 ounces baby portabello mushrooms
  • salt
  • pepper

Recipe

  • 1 dice the shallot.
  • 2 dice the garlic.
  • 3 cut the woody tips off of the asparagus.
  • 4 bring a pot of water to a boil.
  • 5 boil the asparagus for 4 minutes.
  • 6 drain the asparagus.
  • 7 stop the cooking process by pouring cold water over the asparagus.
  • 8 melt the butter.
  • 9 saute the shallot and garlic.
  • 10 add the mushrooms and saute for 5 minutes.
  • 11 add the asparagus.
  • 12 season with salt and pepper.
  • 13 let saute on low for 5 minutes.
  • 14 serve immediately,.
