Perfect Green Beans

Ingredients
- 12 -16 ounces fresh green beans
- 6 cups boiling water
- 1/4 cup sea salt
- 2 -4 minced garlic cloves
- 1/4 cup diced onion
- 1/4 cup diced mushroom
- 1/8 cup olive oil
- 1/8 teaspoon black pepper
- 2 cups ice
- 4 cups cold water
Recipe
- 1 prepare beans by rinsing them and cutting off stems.
- 2 boil water and add salt.
- 3 prepare a large bowl with very cold water and ice.
- 4 add beans to boiling water and stir frequently.
- 5 cook beans approximately 6-10 minutes. i babysit mine to achieve the perfect balance between cooked and still crunchy.
- 6 remove beans and immediately place in ice water to blanche.
- 7 warm sauté pan over medium heat with olive oil and minced garlic.
- 8 add onions and mushrooms and cook approximately 2-3 minutes.
- 9 remove beans from ice water, pat dry and add to sauté pan. stir frequently to coat the beans in the oil and garlic and to mix mushroom and onion.
- 10 add pepper to taste and additional salt if desired.
- 11 saute' beans for approximately 5 mins or until warm.
- 12 serve immediately.
