Perfect Green Beans

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 12 -16 ounces fresh green beans
  • 6 cups boiling water
  • 1/4 cup sea salt
  • 2 -4 minced garlic cloves
  • 1/4 cup diced onion
  • 1/4 cup diced mushroom
  • 1/8 cup olive oil
  • 1/8 teaspoon black pepper
  • 2 cups ice
  • 4 cups cold water

Recipe

  • 1 prepare beans by rinsing them and cutting off stems.
  • 2 boil water and add salt.
  • 3 prepare a large bowl with very cold water and ice.
  • 4 add beans to boiling water and stir frequently.
  • 5 cook beans approximately 6-10 minutes. i babysit mine to achieve the perfect balance between cooked and still crunchy.
  • 6 remove beans and immediately place in ice water to blanche.
  • 7 warm sauté pan over medium heat with olive oil and minced garlic.
  • 8 add onions and mushrooms and cook approximately 2-3 minutes.
  • 9 remove beans from ice water, pat dry and add to sauté pan. stir frequently to coat the beans in the oil and garlic and to mix mushroom and onion.
  • 10 add pepper to taste and additional salt if desired.
  • 11 saute' beans for approximately 5 mins or until warm.
  • 12 serve immediately.
